Apple Cider Mold Recipe

Ingredients
  • 1/2 ts Cinnamon
  • 1 ts Baking soda
  • 1/2 c Buttermilk
  • Vegetable oil or shortening for frying
  • 1 c Sugar
  • 3 1/2 c All-purpose flour
  • 2 ts Baking powder
  • 1/2 ts Salt
  • 1/4 ts Nutmeg
  • 1 c Apple cider
  • 1/4 c Solid vegetable shortening
  • 2 lg Eggs

Directions
  • Step #1 ---GLAZE------ 2 c Confectioners' sugar 1/4 c Apple cider 1.
  • Step #2 Boil apple cider in small saucepan until it is reduced to 1/4 c, 8 to 10 mins; cool.
  • Step #3 2.
  • Step #4 Beat sugar with shortening until smooth.
  • Step #5 Add eggs & mix well, then add buttermilk & reduced cider.
  • Step #6 stir this together flour, baking soda, cinnamon, baking powder, salt & nutmeg in another bowl.
  • Step #7 Add to liquid ingredients; mix just enough to mix.
  • Step #8 3.
  • Step #9 Transfer dough to lightly floured board & pat to 1/2-inch thickness.
  • Step #10 Cut with 2 1/2- to 3-inch doughnut cutter; reserve doughnut holes & reroll & cut scraps.
  • Step #11 4.
  • Step #12 Add enough oil or shortening to fill a deep pan 3 inches; heat to 375'F.
  • Step #13 Fry several doughnuts at a time, until browned & cooked through, turning once or twice, about 4 mins.
  • Step #14 Remove to paper towels with slotted spoon.
  • Step #15 5.
  • Step #16 For glaze, mix confectiners' sugar & cider.
  • Step #17 Dip doughnuts while warm; serve warm.
