  • Step #1 Quality: Good quality apple juice is made from a mix of varieties.
  • Step #2 For best results, buy fresh juice from a local cider maker within 24 hrs after it has been pressed.
  • Step #3 Procedure: put in the fridge juice for 24 to 48 hrs.
  • Step #4 Without mixing, carefully pour off clear liquid & discard sediment.
  • Step #5 Strain clear liquid through a paper coffee filter or double layers of damp cheesecloth.
  • Step #6 Heat quickly, stirring every once in awhile, until juice begins to boil.
  • Step #7 Fill as soon as possible into sterile pint or quart jars or fill into clean half-gallon jars, leaving 1/4-inch headspace.
  • Step #8 Adjust lids & process.
