Apple Quince Jelly Recipe

Ingredients
  • 1 ea Jar chunky apple sauce
  • 1 ea Large egg
  • 2 tb Vegetable oil
  • 8 ea Large ripe strawberries
  • 3/4 c Aunt Jemima pancake m
  • 3/4 c Skim milk
  • 1 x Cinnamon
  • 1 x Powdered sugar

Directions
  • Step #1 Mix the pancake mix, milk, egg & oil in a 2 c measure.
  • Step #2 OK to have a little rough mixture.
  • Step #3 Make the mixture a little thinner than regular batter but thicker than for a crepe.
  • Step #4 Heat an 8" shallow Teflon (sloped sided) pan with a drop of oil on medium heat.
  • Step #5 Pour in 1/4 of the batter (enough to make a thin pancake.
  • Step #6 Allow the dough to cook this until the bubbles form on top but the pk is not cooked all the way through.
  • Step #7 The bottom should be a light golden brown.
  • Step #8 Scoop 3 Tbs of apple sauce on one half of the pancake.
  • Step #9 Quickly fold the other half over so it puffs up.
  • Step #10 Cook for about a min or so (being careful not to burn).
  • Step #11 Turn over briefly to cook other side & warm the apples.
  • Step #12 Serve each on a large platter & top this with cinnamon & sliced strawberries Finish with a little powdered sugar.
  • Step #13 I think what happened was that the applesauce mixed with the still uncooked pancake top & was cooked (mixd) to make an unusual fluffy inside.
  • Step #14 Use one Tb of oil to cut fat.
