Colby Cheesecake Recipe

Ingredients
  • 3 eggs
  • 2 tsps ground nutmeg
  • 2 (8 oz) packages cream cheese, softened
  • 2 c shredded Colby cheese
  • 3 tbsps all-purpose flour
  • 3 tbsps milk
  • 1 tsp vanilla extract
  • 3/4 c white sugar
  • 6 tbsps butter, melted
  • 2 (8 oz) containers vanilla yogurt
  • 1/3 c white sugar
  • 1/8 tsp salt
  • 1 1/2 c crushed zwieback toast

Directions
  • Step #1 For crust, mix the zwieback crumbs, 1/3 c sugar, nutmeg & melted butter.
  • Step #2 Press onto bottom & part way up sides of a 9 inch springform pan.
  • Step #3 Chill crust while preparing filling.
  • Step #4 Preheat oven to 450 degrees F (230 degrees C).
  • Step #5 For filling, beat cream cheese in large mixer bowl until fluffy.
  • Step #6 Stir in Colby cheese, milk, sugar, flour, vanilla & salt.
  • Step #7 Beat on medium speed of mixer until well-mixed -- about 3 mins.
  • Step #8 Beat in eggs, one at a time, beating well after each addition.
  • Step #9 Pour into chilled crust.
  • Step #10 Bake for 10 mins.
  • Step #11 Reduce oven temperature to 250 degrees F (120 degrees C).
  • Step #12 Bake until center of cake is set -- about 40 mins.
  • Step #13 Remove from oven & let this stand 10 mins.
  • Step #14 Spread yogurt over top.
  • Step #15 Return to oven & bake 10 mins.
  • Step #16 Cool completely on wire rack.
  • Step #17 Chill several hrs or overnight.
  • Step #18 To serve, place cake on serving plate.
  • Step #19 Carefully remove sides of pan.
  • Step #20 .
