Apple-cranberry Bread Recipe

Ingredients
  • 1/4 ts Salt
  • 3 c Applesauce
  • 1 c Lowfat cottage cheese
  • OPTIONAL INGREDIENTS
  • 1 c Peeled, cored sliced apples
  • 3 tb Butter - melted
  • 2 tb Sugar
  • Oil as needed
  • 3 lg Eggs - separated
  • 6 tb Flour
  • Apple Cider Syrup see below
  • Cinnamon sugar

Directions
  • Step #1 mix cottage cheese, egg yolks & butter in large bowl & stir this to mix.
  • Step #2 Add sliced apples, flour, sugar & salt; stir this to mix.
  • Step #3 Whisk or beat egg whites in separate bowl until soft peaks form.
  • Step #4 Using rubber spatula, carefully fold into batter.
  • Step #5 Batter will be very stiff.
  • Step #6 Heat nonstick griddle or skillet over med-heat/flame until hot enough to sizzle drop of water.
  • Step #7 Brush with thin film of oil.
  • Step #8 Drop batter onto griddle from 1/4C dry measure & spread batter with back of c to make pancakes that are 4 inches in diameter.
  • Step #9 Cook pancakes over medium-low heat until bubbles cover surface & bottoms are lightly browned.
  • Step #10 Carefully turn & lightly brown other side, about 6 mins total cooking time.
  • Step #11 Sprinkle top warm pancakes with cinnamon sugar & serve this with warm applesauce and/or Apple cider syrup.
  • Step #12 Apple Cider Syrup 1/2C Sugar, 2Tb Cornstarch, 1 cinnamon stick, 2C apple cider, nutmeg to taste.
  • Step #13 mix sugar & cornstarch in saucepan & stir until well mixd.
  • Step #14 slowly stir in the apple cider until mixed.
  • Step #15 Add cinnamon sitck & bring to boil over medium-high heat.
  • Step #16 Cover & cook over low heat/flame 10 mins.
  • Step #17 remove this from heat, grate a little nutmeg into syrup.
  • Step #18 Makes about 2 c.
