Apple-molasses Bread Recipe

Ingredients
  • 1 Single pie crust
  • 1 tb Sugar
  • 1/2 c Heavy cream
  • 1/4 ts Ground cinnamon
  • 1 ts Vanilla
  • 2 tb Cornstarch
  • 2 tb Lightly salted butter
  • 1/2 c Light brown sugar -- packed
  • Peel/core/sliced
  • 1/3 c Maple syrup
  • 1 cn Evaporated milk
  • 1 Egg yolk
  • 2 lb Golden delicious apples --

Directions
  • Step #1 Roll pastry on well-floured board into 12-inch circle.
  • Step #2 Brush off any excess flour.
  • Step #3 Transfer to 9-inch pie pan; trim to 1/2-inch overhang.
  • Step #4 Crimp to form stand-up edge.
  • Step #5 Prick bottom of dough all over with fork.
  • Step #6 put in the fridge at least 30 mins.
  • Step #7 Heat oven to 450.
  • Step #8 Line dough with aluminum foil; fill with dried beans or pie weights.
  • Step #9 Bake for 10 mins.
  • Step #10 Reduce oven temperature to 350.
  • Step #11 Bake for 10 mins more.
  • Step #12 Remove foil & beans.
  • Step #13 bake this until crust is golden, about 15 mins.
  • Step #14 Cool on rack.
  • Step #15 Heat butter in large skillet.
  • Step #16 Add apples & sugar; cook, stirring, until apples are very tender & thickely glazed, 15-20 mins.
  • Step #17 Cool to about room temp.
  • Step #18 Heat milk in saucepan until bubbles appear around edge of pan.
  • Step #19 Whisk yolk, syrup, cornstarch & vanilla in bowl until smooth.
  • Step #20 slowly whisk in milk.
  • Step #21 Return mixture to saucepan.
  • Step #22 Stir over low heat/flame until thickened.
  • Step #23 Remove saucepan from heat; whisk for 1 min.
  • Step #24 Spoon apples into crust.
  • Step #25 top this with hot maple mixture; smooth top.
  • Step #26 Cool to about room temp.
  • Step #27 put in the fridge until custard is firm, about 1hr.
  • Step #28 Beat cream in bowl until soft peaksform.
  • Step #29 Beat in sugar and cinnamon until firm peaks form.
  • Step #30 To serve, decorate with whipped cream.
