Kuo-t'ieu (fried Pork Dumplings) Recipe

Ingredients
  • Marinade :
  • 2 Whole chicken breasts uncooked
  • 2/3 c sliced bamboo shoots
  • 1 Scallion; cut in 1" pieces
  • 1 c Plus 2 tb peanut oil
  • 2 Dry chilis; cut in half and soaked in warm water for 10 mins
  • 1/2 c Straw mushrooms, drained
  • 3 Garlic cloves; sliced
  • Spice uping sauce: see above

Directions
  • Step #1 Skin & bone chicken breasts & cut into 1/2 inch cubes.
  • Step #2 Place chicken in Marinade & toss to coat.
  • Step #3 Marinate for 15 mins in the refrigerator.
  • Step #4 Before stir-frying, add 1 tbsp oil to chicken mixture & mix well.
  • Step #5 Heat 1 c oil to 375 F in wok or skillet over high heat.
  • Step #6 Add chicken & stir-fry for 2 mins.
  • Step #7 Remove & drain well.
  • Step #8 Heat 1 tbsp oil in wok or skillet over high heat.
  • Step #9 Ad chilis; fry until golden brown.
  • Step #10 Add garlic, scallion, bamboo shoots & straw mushrooms.
  • Step #11 Stir-fry for 2 mins.
  • Step #12 Add chicken & stir in the Spice uping Sauce.
  • Step #13 Cook, stirring constantly until sauce thickens.
  • Step #14 Serve hot.
