Ingredients
Marinade :
2 Whole chicken breasts uncooked
2/3 c sliced bamboo shoots
1 Scallion; cut in 1" pieces
1 c Plus 2 tb peanut oil
2 Dry chilis; cut in half and soaked in warm water for 10 mins
1/2 c Straw mushrooms, drained
3 Garlic cloves; sliced
Spice uping sauce: see above
Directions
Step #1 Skin & bone chicken breasts & cut into 1/2 inch cubes.
Step #2 Place chicken in Marinade & toss to coat.
Step #3 Marinate for 15 mins in the refrigerator.
Step #4 Before stir-frying, add 1 tbsp oil to chicken mixture & mix well.
Step #5 Heat 1 c oil to 375 F in wok or skillet over high heat.
Step #6 Add chicken & stir-fry for 2 mins.
Step #7 Remove & drain well.
Step #8 Heat 1 tbsp oil in wok or skillet over high heat.
Step #9 Ad chilis; fry until golden brown.
Step #10 Add garlic, scallion, bamboo shoots & straw mushrooms.
Step #11 Stir-fry for 2 mins.
Step #12 Add chicken & stir in the Spice uping Sauce.
Step #13 Cook, stirring constantly until sauce thickens.
Step #14 Serve hot.
