Kutia (christmas Pudding) Recipe

Ingredients
  • Vegetable oil for deep fryng
  • 2 tb Almonds, blanched
  • 6 tb Butter/oleo
  • 1/2 c Coconut, fresh & shredded
  • 1 c Sugar
  • 1/2 c Water
  • 2 tb Raisins
  • 10 Cordamom pods
  • 1 c Flour
  • 1 c Cream of wheat
  • 1 pn Baking soda
  • 1 pn Salt

Directions
  • Step #1 Sift flour, salt & baking soda together.
  • Step #2 Rub in 2 tb butter/oleo.
  • Step #3 Prepare a stiff dough with some water, about 1/2 c.
  • Step #4 Set aside.
  • Step #5 To prepare the pastry filling, heat remaining butter/oleo in a skillet.
  • Step #6 Add coconut, almonds and cream of wheat.
  • Step #7 cook this until mixture is golden.
  • Step #8 Remove seeds from the 10 cardamom pods.
  • Step #9 Add sugar, cardamom seeds & raisins.
  • Step #10 cook this until sugar is completely dissolved, about 5 to 7 mins.
  • Step #11 Divide dough into 12 equal portions.
  • Step #12 Roll each portion into a 4-in round.
  • Step #13 Place some filling on half of the round, leaving 1/4 inch border around the edge.
  • Step #14 Fold the other half over the mixture & seal edges completely.
  • Step #15 Heat vegetables oil for deep frying.
  • Step #16 Fry the pasteries until golden.
