Kwitiaow Phad Thai (thai-fried Noodles & Sa Recipe

Ingredients
  • 3 tb Sliced shallots
  • 4 Eggs
  • 1 oz Raw prawns, shelled
  • 4 oz Firm bean curd ; sliced
  • 1/4 c Chicken stock
  • 1/3 c Unsalted peanuts, sliced
  • 15 oz Bean sprouts
  • 1/2 c Peanut or corn oil
  • 3 tb Preserved sweet white radish - sliced
  • 4 Spring onions; sliced
  • 11 oz Rice or cellophane noodles , soaked in cold water for 7-10 mins, if dried
  • 3 tb Dried shrimps, sliced

Directions
  • Step #1 ---SAUCE------ 1 c Water 1/2 c Tamarind juice 1/3 c Palm sugar 1 tb White soya sauce Mix all the sauce ingredients together in a pan and boil until reduced to about 2/3 c.
  • Step #2 Set aside to cool.
  • Step #3 Heat the oil in a wok or pan until very hot, then add the prawns & bean curd & stir-fry lightly for 1 min.
  • Step #4 Add the preserved radish & shallot, fry for 1 min, & break in the eggs.
  • Step #5 Stir-fry for a min, then add the noodles & chicken stock.
  • Step #6 When the noodles are soft (about 2 mins), add the dried shrimps, peanuts, spring onions & bean sprouts.
  • Step #7 Add the sauce, fry for a couple of mins & serve.
  • Step #8 Serve accompanied by sliced peanuts, lime wedges, sliced dry chillies, & fresh bean sprouts, sugar, spring onions, all in small containers.
