Lamb & Fennel Salad With Hazelnut Dressing Recipe

Ingredients
  • 1/2 ts Ground nutmeg
  • 1 md Onion, finely sliced

  • 1 ts Ground cardamom
  • 1/4 ts Freshly ground black pepper
  • Pita bread
  • 1 ts Ground cayenne pepper
  • 1 ts Ground allspice
  • 1/2 ts Ground cinnamon
  • 1/2 ts Salt
  • Cooked rice
  • Tomatoes
  • 1 lb Lean ground lamb
  • 1 ts Ground ginger
  • 1/2 ts Ground cumin
  • Low-fat yogurt
  • 1 ts Ground cloves
  • Stephen Ceideburg

Directions
  • Step #1 Keftas, from North Africa, are meatballs prepared with ground lamb or beef & a number of herbs & spices.
  • Step #2 They appear in a variety of dishes, such as stews, & also as brochettes hot off the charcoal grill.
  • Step #3 The Spice upings range from chili to cinnamon & usually include a Moroccan favorite, fresh mint.
  • Step #4 These keftas are delicious served with pita bread, low-fat yogurt, tomatoes & lettuce or with cooked rice.
  • Step #5 Note: If using wooden skewers, soak them in water for 20 mins.
  • Step #6 mix all ingredients, cover & put in the fridge for 1 hr or up to 24 hrs.

  • Step #10 Grill for 3 mins on each side, or just until no longer pink inside.
