Lamb Chili Recipe

Ingredients
  • Mustard
  • Mayonnaise
  • 4 Hamburger buns
  • 1/4 lb Bacon
  • 4 tb Roquefort =OR=- Blue cheese
  • 2 lb Lamb stew meat

Directions
  • Step #1 COARSELY CHOP THE BACON.
  • Step #2 Pass both bacon & lamb through a meat grinder fitted with a medium cutter.
  • Step #3 Scrape into a bowl, mix well and form into 4 patties.
  • Step #4 place this in the refrigerator, covered, to chill for 20 mins.
  • Step #5 Heat a large heavy skillet to almost smoking.
  • Step #6 Add the patties, reduce heat to medium & cook 3 mins.
  • Step #7 Turn & continue to cook 2 mins more.
  • Step #8 Place a tbsp dollop of cheese on each patty, cover & cook another 1-to-2 mins.
  • Step #9 Remove the patties from the heat & place on hamburger buns.
  • Step #10 Serve as soon as possible & offer mustard & mayonnaise.
