Lamb Cutlets (nz) Recipe

Ingredients
  • 1 tb Minced fresh ginger
  • 1 ts Cinnamon,
  • 2 ts Ground tumeric
  • 1 ts Ground mustard seeds
  • 2 tb Ground coriander seeds
  • 1 lg Onion, sliced
  • 4 c Unflavored yogurt
  • 2 tb Clarified butter
  • 4 Green chile peppers, sliced
  • 1 lg Onion, minced
  • 2 lb Boneless lamb, cubed
  • Salt to taste
  • 2 Garlic cloves, minced
  • 1 ts Ground cumin seeds

Directions
  • Step #1 Place chiles, garlic, ginger, mined onion, spices & yogurt in a mixer or food processor/blender & process until well mixed.
  • Step #2 Spoon mixture over lamb, tossing to coat well, cover & put in the fridge for 3 hrs.
  • Step #3 Saute sliced onion in clarified butter.
  • Step #4 Do not let onion brown.
  • Step #5 Add lamb & the yogurt marinade, mix all together; cover & let simmer until meat is tender, 1 to 1 1/2 hrs.
  • Step #6 Spice up this with salt to taste.
