Ingredients
1/2 oz Fat/oil
sliced parsley
Nutmeg
Salt & Pepper
1 Lemon, juice
4 tb Redcurrant jelly
300F ml Stock
2 tb Worcester sauce
4 oz Button mushrooms
8 Lamb cutlets/chops
1 tb Flour
Directions
Step #1 Trim cutlets & brown on both sides in fat or oil.
Step #2 Slice the mushrooms & soften them in the same pan.
Step #3 Put the meat & mushrooms in a casserole.
Step #4 In a small pan, heat worcester sauce, redcurrant jelly & lemon juice.
Step #5 mix together.
Step #6 In the remaining fat in the pan, fry the flour until it is golden - 10 mins on gentle heat.
Step #7 Stir in the mixed liquids.
Step #8 Bring to boil, stirring.
Step #9 Add enough stock to make a thick sauce.
Step #10 Spice up to taste & strain over cutlets.
Step #11 Cook in pre-heated 170 C oven till tender (1? hrs or so).
Step #12 Sprinkle top with parsley & serve.
