Lamb Cutlets With Mint & Mustard Recipe

Ingredients
  • 1/2 oz Fat/oil
  • sliced parsley
  • Nutmeg
  • Salt & Pepper
  • 1 Lemon, juice
  • 4 tb Redcurrant jelly
  • 300F ml Stock
  • 2 tb Worcester sauce
  • 4 oz Button mushrooms
  • 8 Lamb cutlets/chops
  • 1 tb Flour

Directions
  • Step #1 Trim cutlets & brown on both sides in fat or oil.
  • Step #2 Slice the mushrooms & soften them in the same pan.
  • Step #3 Put the meat & mushrooms in a casserole.
  • Step #4 In a small pan, heat worcester sauce, redcurrant jelly & lemon juice.
  • Step #5 mix together.
  • Step #6 In the remaining fat in the pan, fry the flour until it is golden - 10 mins on gentle heat.
  • Step #7 Stir in the mixed liquids.
  • Step #8 Bring to boil, stirring.
  • Step #9 Add enough stock to make a thick sauce.
  • Step #10 Spice up to taste & strain over cutlets.
  • Step #11 Cook in pre-heated 170 C oven till tender (1? hrs or so).
  • Step #12 Sprinkle top with parsley & serve.
