Step #1 mix the olive oil, lemon juice, scallion, garlic, & coriander in a mixing bowl & Spice up to taste with 1/2 tsp of salt or more; Spice up this with cayenne pepper if you wish.
Step #2 Add the lamb and marinate for as long as possible (up to 3 hrs at about room temp or 6 hrs in the refrigerator); turn the meat in the marinade every now & then.
Step #3 Soak bamboo skewers in water while this marinates.
Step #4 Position the broiler pan 4 to 5 inches away from the heat.
