Lamb Kofta With Yogurt Sauce Recipe

Ingredients
  • 1/4 c Fresh lemon juice
  • Taste
  • 1/4 ts Ground coriander
  • 1 sm Clove minced garlic
  • 1 Scallion -- finely sliced
  • Squares
  • 1 1/2 lb Boneless leg of lamb -- cut
  • Salt & cayenne pepper to
  • Into 1inch
  • 1/4 c Olive oil

Directions
  • Step #1 mix the olive oil, lemon juice, scallion, garlic, & coriander in a mixing bowl & Spice up to taste with 1/2 tsp of salt or more; Spice up this with cayenne pepper if you wish.
  • Step #2 Add the lamb and marinate for as long as possible (up to 3 hrs at about room temp or 6 hrs in the refrigerator); turn the meat in the marinade every now & then.
  • Step #3 Soak bamboo skewers in water while this marinates.
  • Step #4 Position the broiler pan 4 to 5 inches away from the heat.
