Lamb Shish Kebab Recipe

Ingredients
  • 1 Bay leaf
  • 6 md Lamb shanks, about 8 oz each
  • 2 ts Salt
  • Pepper to taste
  • 1 sm Onion, stuffed with 3 whole cloves
  • 1/2 c sliced celery
  • 6 Thin lemon slices
  • 1 1/2 c Lentils
  • 1/2 c Water
  • 1/2 ts Dried oregano
  • 3 c Water
  • 2 ts Minced garlic
  • 2 tb Vegetable oil

Directions
  • Step #1 From "The Complete Book of Greek Cooking," edited by Katherine R.
  • Step #2 Boulukos (Harper-Collins).
  • Step #3 In a large skillet, brown lamb shanks in oilve oil.
  • Step #4 Add 1/2 c water, 1/2 tsp salt, garlic, oregano & pepper.
  • Step #5 Cook, over low heat for one hr, covered, or until tender.
  • Step #6 Rinse lentils & drain.
  • Step #7 In a medium saucepan, mix lentils, celery, onion, 3 c water, bay leaf & 1-1/2 tsps of salt.
  • Step #8 Simmer, uncovered, 50-60 mins, or until vegetables are tender.
  • Step #9 Pour mixture into greased baking dish.
  • Step #10 top this with meat, lemon slices.
  • Step #11 Bake 20-25 mins, until liquid is absorbed & lentils are tender.
  • Step #12 Discard onion & bay leaf.
