Lamb Shoulder In Pastry (guilainn Chaoireola Recipe

Ingredients
  • Lamb, cut into 1 1/2" cubes
  • 2 Garlic cloves, crushed
  • 2 lg Yellow onions
  • 1/2 ts Dried mint 1 tb Fresh mint
  • 1 tb Light soy sauce
  • 2 Green Peppers
  • 1/2 ts Oregano
  • 2 lb Leg of lamb or shoulder of
  • 1/2 c Olive oil

Directions
  • Step #1 Cut the green peppers first in halves & then in thirds the long way.
  • Step #2 Remove the seeds & cut each piece across.
  • Step #3 You now have 12 squares of green pepper.
  • Step #4 Peel the yellow onions & cut in half across the middle.
  • Step #5 Cut each piece in quarters.
  • Step #6 Peel the layers so that you have 6 pieces about the same size as the green pepper squares.
  • Step #7 Place the green peppers & onions in a large mixing bowl along with the lamb.
  • Step #8 Make a sauce of the olive oil, mint (more if fresh mint), oregano, garlic & soy sauce.
  • Step #9 Mix well, & pour over the meat and vegetables.
  • Step #10 Mix well again & let sit for 3 hrs.
  • Step #11 Arrange on skewers in this order: onion, meat, onion, meat, green pepper, meat, green pepper, meat.
  • Step #12 End with an onion.
  • Step #13 Grill until lightly browned on all sides, approximately 15 mins (don't overcook).
  • Step #14 These can also be broiled in the oven.
  • Step #15 You can substitute good beef cubes for the lamb & it still is one of the best! ~--.
