Ingredients
Oregano & lemon quarters
1/4 ts Thyme
1/4 c Olive oil
8 Bay leaves; cut
Karen Mintzias
1/4 c Wine
4 Baby lamb kidneys, opt.
Firm tomatoes ; 1/4'd
Freshly ground black pepper
Lemon's juice
5 Baby lamb sweetbreads, opt.
1 Bay leaf; crushed
Salt
1/4 ts Rosemary
2 Garlic cloves; crushed
1/4 ts Oregano
1 Leg of lamb; boned, cubed
Green peppers ; cubed
Directions
Step #1 Note: Lamb meat(s) should be cut into cubes the size of walnuts.
Step #2 Place the lamb, sweetbreads, & kidney cubes in a large non-aluminum bowl.
Step #3 Make a marinade of the oil, garlic, herbs, lemon juice, wine, & pepper & pour over the meat.
Step #4 Marinate in the refrigerator, preferably overnight, or for at least 3 hrs.
Step #5 Thread the meat on long skewers alternating the bay leaves with the tomatoes and peppers, if desired.
Step #6 Grill over hot coals or broil 6 inches from the heat, brushing with the remaining marinade & turning frequently.
Step #7 Spice up this with salt & pepper, then remove the meat from the skewers to a warm platter & crush oregano over the top.
Step #8 Garnish with lemon quarters & serve hot.
