Lamb Spirals With Goat Cheese Ravioli Recipe

Ingredients
  • Oregano & lemon quarters
  • 1/4 ts Thyme
  • 1/4 c Olive oil
  • 8 Bay leaves; cut
  • Karen Mintzias
  • 1/4 c Wine
  • 4 Baby lamb kidneys, opt.
  • Firm tomatoes ; 1/4'd
  • Freshly ground black pepper
  • Lemon's juice
  • 5 Baby lamb sweetbreads, opt.
  • 1 Bay leaf; crushed
  • Salt
  • 1/4 ts Rosemary
  • 2 Garlic cloves; crushed
  • 1/4 ts Oregano
  • 1 Leg of lamb; boned, cubed
  • Green peppers ; cubed

Directions
  • Step #1 Note: Lamb meat(s) should be cut into cubes the size of walnuts.
  • Step #2 Place the lamb, sweetbreads, & kidney cubes in a large non-aluminum bowl.
  • Step #3 Make a marinade of the oil, garlic, herbs, lemon juice, wine, & pepper & pour over the meat.
  • Step #4 Marinate in the refrigerator, preferably overnight, or for at least 3 hrs.
  • Step #5 Thread the meat on long skewers alternating the bay leaves with the tomatoes and peppers, if desired.
  • Step #6 Grill over hot coals or broil 6 inches from the heat, brushing with the remaining marinade & turning frequently.
  • Step #7 Spice up this with salt & pepper, then remove the meat from the skewers to a warm platter & crush oregano over the top.
  • Step #8 Garnish with lemon quarters & serve hot.
