Lamb Steamed In Rice Powder Recipe

Ingredients
  • 1/2 c Dry vermouth
  • 1/2 lb Small mushrooms
  • 6 Lamb steaks from the boned rib OR loin, trimmed into
  • 1/2 ts Grated lemon peel
  • 1/2 ts sliced dried rosemary OR
  • Round steaks 1" thick
  • 2 tb sliced shallot
  • 3 tb Butter
  • 1 Onion, sliced
  • 3 tb Minced fresh parsley
  • 1/4 ts Pepper
  • 1 ts Salt
  • 1 ts Finely sliced fresh rosemary
  • 1 Clove garlic, minced

Directions
  • Step #1 preheat your trusty oven to 350 degrees.
  • Step #2 Rub lamb with a mixture of garlic, salt & pepper & rosemary.
  • Step #3 Heat 2 tbsps butter in a large skillet.
  • Step #4 Saute' meat slices over moderate heat until well browned on one side.
  • Step #5 Pour off excess fat from pan.
  • Step #6 Turn & brown other side.
  • Step #7 Remove & keep warm in ovenproof serving dish.
  • Step #8 add in the remaining tbsp butter to same skillet & heat.
  • Step #9 Add onion, shallot, lemon peel & mushrooms.
  • Step #10 Saute' until softened.
  • Step #11 Add vermouth & pour over meat.
  • Step #12 Cover serving dish loosely with aluminum foil & bake about 10 mins for pink lamb, 15 mins for well done.
  • Step #13 Remove foil & bake 5 more mins.
  • Step #14 Spice up to taste & Sprinkle top with sliced parsley before serving.
  • Step #15 Serves 6.
