Lamb With Yoghurt~ Coconut Milk & Almond Ma Recipe

Ingredients
  • 6 Cardamom pods
  • 8 tb Vegetable oil
  • 2 Medium onions finely sliced
  • 1/4 ts Black peppercorns
  • 5 tb Plain yogurt well beaten
  • 2 Bay leaves
  • 2 ts Salt
  • 2 ts Ground cumin seeds
  • 6 Garlic cloves sliced
  • 1 Inch cube of ginger sliced
  • 2 lb Fresh spinach sliced
  • 2 lb Cubed lamb
  • 1/4 ts Cayenne pepper
  • 6 Whole cloves
  • 1/4 ts Garam masala
  • 1 ts Coriander seeds

Directions
  • Step #1 Heat the oil in a large pot over a medium-high flame.
  • Step #2 When hot, bay leaves, put in the peppercorns, cloves, and cardamom pods.
  • Step #3 Stir for a second.
  • Step #4 Now put in the onions, garlic & ginger.
  • Step #5 Stir & fry until the onions develop brown specks.
  • Step #6 Now add the meat, cayenne pepper, ground cumin, ground coriander, and 1q/2 of the salt.
  • Step #7 Stir & fry for a min.
  • Step #8 Add 1 tbsp of the yogurt.
  • Step #9 Stir & fry for a min.
  • Step #10 Keep doing this until all yogurt has been incorporated.
  • Step #11 The meat should also have a slightly browned look.
  • Step #12 Add the spinach & the remaining salt.
  • Step #13 stir this to mix.
  • Step #14 Keep stirring & cooking until the spinach wilts completely.
  • Step #15 Cover tightly & let simmer on low heat for about 1 hr or until meat is tender.
  • Step #16 Remove the lid & add the garam masala.
  • Step #17 Turn the heat to medium.
  • Step #18 Stir & cook another 5 mins until most of the water in the spinach disappears & you have a thick, green sauce.
  • Step #19 Remove the whole spices & serve.
