Chocolate Zucchini Sheet Cake Recipe

Ingredients
  • 2 c shredded zucchini
  • 1 tbsp vanilla extract
  • 1/4 tsp salt
  • 1/4 tsp baking powder
  • 1/4 c baking cocoa
  • 3 eggs
  • 1/4 c baking cocoa
  • 2 c sugar
  • 2 1/2 c all-purpose flour
  • 1 lb confectioners' sugar
  • 6 tbsps evaporated milk
  • 1 c vegetable oil
  • 1 tsp baking soda
  • 1/2 c butter or margarine
  • 1 tbsp vanilla extract
  • FROSTING:
  • 1/2 c milk

Directions
  • Step #1 In a large mixing bowl, mix sugar & oil.
  • Step #2 Add eggs, one at a time, beating well after each addition.
  • Step #3 Combine flour, cocoa, baking soda, baking powder & salt; slowly add to the egg mixture alternately with the milk.
  • Step #4 Stir in the zucchini & extract.
  • Step #5 Pour into a greased 15-in.
  • Step #6 x 10-in.
  • Step #7 x 1-in.
  • Step #8 baking pan.
  • Step #9 Bake at 375 degrees F for 25 mins or until cake tests done.
  • Step #10 While cake is baking, mix all frosting ingredients.
  • Step #11 Mix until smooth.
  • Step #12 Spread frosting over cake while hot.
  • Step #13 Cool on wire rack.
