Lancaster County Lima Beans Recipe

Ingredients
  • 16 oz Beets, sliced canned
  • 3/4 c Cider vinegar
  • 1/2 c ;Water, hot
  • 1 ts Mustard, prepared
  • 6 tb Sugar, granulated
  • 1 tb Pickling spice
  • 1/8 ts Salt
  • 3 tb Mayonnaise
  • 1 sm Onion; cut in rings
  • 4 Egg; hard-cooked, shelled

Directions
  • Step #1 Drain liquid from beets into a medium saucepan.
  • Step #2 stir in the vinegar, sugar & pickling spices.
  • Step #3 Heat to boiling, simmer five mins.
  • Step #4 Strain into a two-c measure.
  • Step #5 mix beets & onion in medium bowl; add one c of the pickling liquid; stir this to mix; chill.
  • Step #6 Stir hot water into remaining pickling liquid; pour over eggs in medium bowl.
  • Step #7 let this stand, turning several times, about an hr or until eggs are a rich pink; drain of liquid.
  • Step #8 Chill eggs until ready to stuff.
  • Step #9 Halve eggs lengthwise; scoop out yolks into small bowl; mash well.
  • Step #10 Beat in salad dressing, mustard & salt until mixture is light and fluffy.
  • Step #11 Pile back into whites.
  • Step #12 Drain liquid from beets & onions; spoon into the centre of a serving dish.
  • Step #13 Place devilled eggs in a ring around edge.
