Larry's Tropical Treats Recipe

Ingredients
  • 2 ts Basil -- crushed, or Italian herb Spice uping Black Pepper -- freshly ground
  • 3 tb Italian Parsley -- freshly sliced, or -- fresh basil -- for garnish
  • 2 lb Russet Potatoes -- boiled in skins till
  • 1 bn Green Onions -- sliced
  • 1/2 c Vegetarian Broth -- chicken flavored Paprika -- Hungarian

Directions
  • Step #1 Peel cooked potatoes & dice in 1" cubes.
  • Step #2 place this in an 8x11x2" baking dish that has been sprayed with nonstick spray.
  • Step #3 Sprinkle top with sliced green onions, Italian Spice uping, & freshly ground pepper.
  • Step #4 Mix carefully with a fork to distribute the ingred.
  • Step #5 Pour veg (chicken) stock over the potatoes & Sprinkle top generously with Hungarian paprika.
  • Step #6 Bake in a preheated 400F deg F.
  • Step #7 oven on upper shelf.
  • Step #8 Stir every 15 min until nicely browned & crisp, about 45 min.
  • Step #9 Place under broiler to complete browning before serving.
  • Step #10 To Serve: Garnish with freshly sliced Italian parsley or fresh basil.
  • Step #11 Because it is so easy to prepare, this dish lends itself nicely to outdoor entertaining for lg parties.
  • Step #12 VARIATION: In step 4, after stirring, spray with a mixture of 3 Tbsp mild soy sauce & 1/4 C water placed in a plastic spray bottle.
  • Step #13 Stir again.
  • Step #14 Spray & stir every 15 min.
  • Step #15 This will, of course, increase the sodium content of the recipe.
