Ingredients
  • 1 tb Tomato Paste
  • 1 ts Thyme
  • 1/2 ts Fennel Seeds,
  • Firm Tofu Drained &
  • Mozzarella Cheese
  • Tomatoes Undrained &
  • 1/2 c sliced Red Bell Pepper
  • 1/4 ts Pepper
  • 3/4 lb Mushrooms Sliced
  • 1 c Thinly Sliced Green Onions
  • 2 c Finely sliced Fennel Bulb
  • Crumbled
  • Choppped
  • 1/4 ts Salt, Pepper
  • 1 Pkg.
  • 1 Can Whole
  • 1 1/2 c Shredded
  • 2 lg Garlic Cloves Minced
  • 8 Cooked Lasagna Noodles

Directions
  • Step #1 Coat A Large Skillet With Spray.
  • Step #2 Place over med-heat/flame Until Hot.
  • Step #3 Add Garlic; Saute 2 Min.
  • Step #4 Add Mushrooms, Thyme, sliced Red Pepper, Salt & Black Pepper; Cook Over High Heat 8 Min.
  • Step #5 OR Until Liquid Evaporates, Stirring Constantly.
  • Step #6 mix Mushroom Mixture & Tofu in A Medium Bowl.
  • Step #7 Stir Well & Set Aside.
  • Step #8 Wipe Pan Dry With A Paper Towel; Coat With Cooking Spray.
  • Step #9 Place Over Medium-High Heat Until Hot.
  • Step #10 Add Green Onions & Saute 3 Min.
  • Step #11 Stirring Frequently.
  • Step #12 Add Fennel Bulb, Fennel Seeds, Black Pepper & Salt; Cook 3 Min.
  • Step #13 , Stirring Frequently.
  • Step #14 Add Tomatoes & Tomato Paste; Cook An extra 5 Min.
  • Step #15 remove this from Heat.
  • Step #16 Spread 1 C.
  • Step #17 Tomato Mixture Over Bottom Of An 8-Inch Square Baking Dish.

  • Step #19 Mushroom Mixture Over Each Noodle.
