Lasagne Rollups Recipe

Ingredients
  • 1/4 c Plus 2 T. Parmesan cheese; grated & divided
  • 12 Lasagne noodles cooked and drained
  • 2 tb Onion; finely sliced
  • 1/2 ts Garlic; minced
  • 1 1/4 c Milk
  • 1/2 ts Salt; divided
  • 10 oz Pkg. frozen sliced spinach; cooked & thoroughly drained
  • 1 Egg
  • ds Nutmeg
  • 8 oz Pkg. Mozzarella cheese; shredded
  • 1/4 ts Basil
  • 2 tb Butter or margarine
  • 1/2 ts Marjoram
  • 2 tb Flour
  • 15 oz Container ricotta cheese
  • 1/4 ts Pepper; divided

Directions
  • Step #1 preheat your trusty oven to 350 degrees F.
  • Step #2 In a medium saucepan, melt butter; add onion & garlic & saute 3 mins or until onion is soft.
  • Step #3 stir in the flour; cook 1 min.
  • Step #4 Add milk & stir over med-heat/flame until thickened.
  • Step #5 stir in the 2 tbsps Parmesan cheese, 1/4 tsp.
  • Step #6 salt, 1/8 tsp.
  • Step #7 pepper, & nutmeg.
  • Step #8 pour the sauce into mixer container & add half of the spinach; puree until smooth.
  • Step #9 pour the sauce back into saucepan; stir in the remaining spinach.
  • Step #10 Pour 1/2 c sauce into a deep 3-qt.
  • Step #11 casserole.
  • Step #12 In a large bowl, mozzarella, 1/4 c Parmesan cheese, basil, egg, mix ricotta, marjoram, 1/4 tsp.
  • Step #13 salt, & 1/8 tsp.
  • Step #14 pepper.
  • Step #15 To assemble, lay noodles out flat.
  • Step #16 Spread 3 tbsps cheese mixture over each, leaving 2" of noodle uncovered at one end.
  • Step #17 Starting at opposite end, roll up jellyroll style.
  • Step #18 Stand upright in casserole dish.
  • Step #19 Arrange rolls in dish to touch each other.
  • Step #20 Pour remaining sauce over rolls.
  • Step #21 Bake, covered, 30 mins or until heated through.
