Lasagne With Mushroom & Onions Recipe

Ingredients
  • 1 ts Chilli powder
  • 200 g Oven-ready lasagne
  • 2 ts Dried basil
  • 400F g Can of tomatoes
  • 1 Aubergine
  • 2 ts Dried oregano
  • 2 lg Onions, finely sliced
  • 3 cl Garlic, finely sliced
  • 2 Bell peppers - different colours
  • 125 ml Water
  • 3 md Courgettes
  • Salt & black pepper

Directions
  • Step #1 NOTE: 200g lasagne is about 10-12 pieces I think.
  • Step #2 CONVERSIONS: 200g = 7 oz : 125 ml = 5 fl oz = 1/4 British pint = 1/2 US c : 1 cm = 1/2 inch ABBREVIATIONS: md = medium lg = large cl = clove ts - tsp Cut the aubergine into 1 cm dice.
  • Step #3 Halve the courgettes lengthways then slice into thick half-moons.
  • Step #4 Deseed the bell peppers & cut into 1 cm squares.
  • Step #5 Put the tomatoes in a large pan & crush with a potato masher.
  • Step #6 Add the vegetables, herbs, chilli powder & Spice uping.
  • Step #7 Bring to the boil, cover & let simmer 40 mins, stirring every once in awhile.
  • Step #8 Layer the sauce & lasagne pieces in a casserole dish, beginning & ending with a layer of vegetables.
  • Step #9 Pour over the water to moisten.
  • Step #10 Bake, covered, at 190 C (375 F, Gas 5) for 45-50 mins & serve this with a green salad.
