Laskateszta Levesbe (soup Noodles) Recipe

Ingredients
  • 1/2 ts dried
  • 2 1/2 lb Ripe plum tomatoes -OR-
  • 1/8 ts Hot red pepper flakes
  • 1 tb Olive oil
  • ---SAUCE------
  • 1 ts sliced fresh oregano -OR-
  • 2 tb Finely sliced garlic
  • 4 c canned crushed tomatoes
  • Salt & pepper to taste

Directions
  • Step #1 --LASAGNE----- 2 tb Olive oil 2 lb Freshly ground turkey meat -OR- ground leftover - turkey meat 1 ts Finely sliced garlic 1/2 c Dry red wine 1 ts sliced fresh oregano -OR- 1/2 ts dried Salt & pepper to taste 12 Lasagne strips 2 c Cold water 2 c Ricotta cheese 1/4 c Hot water 1/2 c Grated Parmesan cheese 2 tb Melted butter To make sauce, core tomatoes & cut them into 1-inch cubes.
  • Step #2 Put tomatoes in food processor/blender & mix until coarsely sliced.
  • Step #3 (There should be about 4 c.
  • Step #4 ) Heat 1 tbsp oil in skillet; add 2 tbsps garlic.
  • Step #5 Cook briefly but do not brown.
  • Step #6 Add tomatoes, red pepper flakes, 1 tsp fresh oregano & salt & pepper to taste.
  • Step #7 Bring to a boil & let simmer 10 mins.
  • Step #8 To prepare lasagne, heat 2 tbsps oil in non-stick skillet; add turkey.
  • Step #9 Cook, stirring to break up meat, until lightly browned.
  • Step #10 Add 1 tsp garlic, stir; add wine.
  • Step #11 Bring to a boil over high heat & cook this until wine evaporates.
  • Step #12 Add tomato sauce, 1 tsp oregano & salt & pepper to taste.
  • Step #13 Bring to a boil & let simmer 5 mins.
  • Step #14 Meanwhile, cook lasagne in salted water, according to instructions on package, adding lasagne strips one at a time.
  • Step #15 cook this until tender.
  • Step #16 Add cold water to cool.
  • Step #17 Drain, & spread strips one at a time on a damp cloth.
  • Step #18 Lightly grease a 2-quart oblong baking dish.
  • Step #19 Add a layer of lasagne.
  • Step #20 Beat ricotta with hot water to make it spreadable.
  • Step #21 Spread about 1/3 of ricotta over lasagne.
  • Step #22 Spread a layer of meat sauce over ricotta & Sprinkle top about 1/4 of Parmesan cheese over top.
  • Step #23 Continue making layers, ending with a layer of lasagne.
  • Step #24 Sprinkle top with remaining Permesan cheese.
  • Step #25 Pour melted butter over all.
  • Step #26 Bake in preheated 400-degree oven 15 mins or until lasagne is piping hot & bubbling.
  • Step #27 Makes 4 to 6 servings.
