Late-summer Soup Recipe

Ingredients
  • 8 md Potatoes
  • 1/4 ts Garlic powder
  • 8 oz Dairy sour cream
  • 1/2 c Butter or margarine
  • 1/4 ts Pepper
  • 8 oz Cream cheese, softened
  • 4 oz Shredded cheddar cheese

Directions
  • Step #1 Peel & quarter potatoes.
  • Step #2 In a large saucepan, cook potatoes in enough water to cover for 20 to 25 mins or till tender.
  • Step #3 Drain off liquid.
  • Step #4 In a large mixing bowl, mix the potatoes, sour cream, cream cheese, butter or margarine, garlic powder & pepper.
  • Step #5 Beat the mixture with an electric mixer till fluffy.
  • Step #6 Turn mixture into a buttered 2-quart casserole or baking dish.
  • Step #7 top this with cheddar cheese.
  • Step #8 Cover & bake in a 350 degree oven for 45 mins.
  • Step #9 Uncover & bake for 15 mins more.
