Layered Salad Recipe

Ingredients
  • 2 c Tomatoes, canned; broken up
  • 2 Garlic cloves; crushed
  • 1 tb Tamari, low sodium
  • Paprika
  • 2 c Corn kernels, frozen
  • 1/3 c Vegetable broth
  • 1 ts Thyme
  • 5 c Brown rice; cooked
  • 6 oz Tomato paste
  • 1 Onion; sliced
  • 1 c White beans; cooked

Directions
  • Step #1 Saute the onion & garlic in 1/4 c broth.
  • Step #2 mix with the beans, tamari, corn, tomatoes, & thyme.
  • Step #3 mix the tomato paste & 1/2 c water.
  • Step #4 In a casserole dish, then the bean vegetable mixture, layer 2 1/2 c rice on the bottom, then the tomato paste mixture.
  • Step #5 Cover with the remaining 2 1/2 c of rice.
  • Step #6 Sprinkle top with paprika.
  • Step #7 bake this at 350 degrees for 45 mins, covered for 30 mins, then uncovered for 15 mins.
