Lazy Daisy Oatmeal Cake Recipe

Ingredients
  • 8 oz Coconut; shredded
  • --BARB DAY-----
  • 4 tb Cream
  • 1 c Milk
  • 1/4 ts Lemon rind; grated
  • 2 1/2 ts Baking Powder
  • 4 Egg
  • 3/4 c Light brown sugar; firmly p
  • 2 1/2 c Cake Flour; sifted
  • 4 tb Butter; melted
  • 1 1/2 c Sugar
  • 1 ts Salt
  • 2 ts Lemon juice
  • 4 tb Butter; or shortening

Directions
  • Step #1 Sift flour once, measure, add baking powder & salt, & sift together three times.
  • Step #2 Heat milk , butter, & lemon rind over low flame until butter is melted (do not scald).
  • Step #3 remove this from fire and cool slightly.
  • Step #4 Add lemon juice to eggs & beat until thick and lemon-colored; add sugar slowly, & beat until light & fluffy.
  • Step #5 Add flour, alternately with warm milk mixture, mixing quickly but thoroughly.
  • Step #6 Bake in greased pan, 10x10x2 inches, in moderate oven (350degrees F.
  • Step #7 ) 35 mins, or until done.
  • Step #8 mix brown sugar, cream, melted butter, & cocoonut & mix lightly until thoroughly mixed.
  • Step #9 Spread this mixture evenly over top of cake.
  • Step #10 Return cake to oven & bake 11 to 15 mins longer, or until brown sugar mixture carmelizes.
  • Step #11 Cut in squares.
  • Step #12 This cake is delicious warm but it also be served cold.
