Lazy Enchiladas Recipe

Step #1 Sift flour once, add baking powder & salt, measure, & sift together three times.
Step #2 Heat milk , butter, & lemon rind over low flame until butter is melted (do not scald).
Step #3 remove this from fire and cool slightly.
Step #4 Add lemon juice to eggs & beat until thick and lemon-colored; add sugar slowly, & beat until light & fluffy.
Step #5 Add flour, alternately with warm milk mixture, mixing quickly but thoroughly.
Step #6 Bake in greased pan, 10x10", in moderate oven (350~) 35 mins, or until done.
Step #7 mix brown sugar, melted butter, cream, & cocoonut & mix lightly until thoroughly mixed.
Step #8 Spread this mixture evenly over top of cake.
Step #9 Return cake to oven & bake 11-15 mins longer, or until brown sugar mixture carmelizes.
Step #10 Cut in squares.
Step #11 Good warm.
