Lee's Spare Ribs & Apple Dressing Recipe

Ingredients
  • 1 Clove garlic, crushed
  • 3/4 ts Cornstarch
  • 1 ts Sugar
  • 1 lb Chicken thighs
  • 1 1/2 lb Fresh asparagus
  • 3 tb Oil
  • 3/4 c Water
  • 1 1/2 tb Cold water
  • 1/2 ts Salt
  • 1 1/2 tb Fermented black beans

Directions
  • Step #1 -Spice upING---- 1 ts Salt 1 ts Sugar 1 ts Thin soy sauce 1 Green onion, slivered Dash of pepper 1.
  • Step #2 Bone & remove skin from chicken.
  • Step #3 Cut into 1"x 1 1/2" pieces.
  • Step #4 2.
  • Step #5 Add "Spice uping" to chicken & mix well.
  • Step #6 3.
  • Step #7 Cut off & discard the last 2 " at the base end of the asparagus.
  • Step #8 Then, cut each spear diagonally into 2" lengths.
  • Step #9 Wash & drain.
  • Step #10 4.
  • Step #11 Wash black beans thoroughly (at least 2 rinses).
  • Step #12 Mash the beans & mix with the crushed garlic.
  • Step #13 5.
  • Step #14 Heat wok.
  • Step #15 Add 2 tbsp oil.
  • Step #16 Stir-fry the Spice uped chicken for 5 mins.
  • Step #17 Set aside.
  • Step #18 6.
  • Step #19 Reheat wok.
  • Step #20 Add 1 tbsp oil & the black bean mixture and cook for 1 min.
  • Step #21 7.
  • Step #22 Add the asparagus & stir-fry for 2 mins.
  • Step #23 Then add salt, sugar, & water.
  • Step #24 8.
  • Step #25 Add the chicken & bring the mixture to a boil.
  • Step #26 9.
  • Step #27 Thicken with cornstarch mixture (made with 3/4 tbsp cornstarch & 1 1/2 tbsp cold water).
  • Step #28 Cook for 1 min, and serve.
  • Step #29 NOTE: Do not try to substitute canned asparagus! SOURCE: Chopsticks, Wok & Clever.
