Leek & Potato Pasties Recipe

Ingredients
  • 1 Salt & pepper
  • 6 oz Evaporated skim milk
  • 1 c Grated mozzarella
  • 1 c Hot water
  • 1 Red bell pepper, sliced
  • 1 Minced chives for top
  • 4 Potatoes, baked, peel, slice
  • 2 Lg leeks, white part sliced
  • 2 tb Margarine
  • 3 Matzos, broken

Directions
  • Step #1 preheat your trusty oven to 350F.
  • Step #2 Heat margarine in skillet.
  • Step #3 Add leeks & saute, cover until wilted.
  • Step #4 Add red pepper saute 5 min.
  • Step #5 mix matzos with water in bowl, soak 3-5 min.
  • Step #6 until soft.
  • Step #7 Drain, squeeze out excess water.
  • Step #8 mix leek mixture & matzos with remaining ingredients, except cheese & chives.
  • Step #9 Stir until fully mixed.
  • Step #10 pour this into an oiled shallow 2 qt.
  • Step #11 casserole.
  • Step #12 Sprinkle top cheese over top followed by chives.
  • Step #13 Bake 35 to 40 min, or until top golden.
  • Step #14 let this stand 5 to 10 min & cut.
