Leeks & Peppers Recipe

Ingredients
  • 4 md Potatoes
  • 1 Red bell pepper
  • 4 Leeks

Directions
  • Step #1 VINAIGRETTE--- 1 Lemon, juice 1/4 c White vinegar 1/4 c Olive oil 1 cl Garlic, minced -or pressed 2 ts sliced dill Salt & pepper -to taste Wash leeks.
  • Step #2 Slice bulb & tender green parts into 1/2" pieces.
  • Step #3 Drop in boiling water, cook them for about 5 min (no longer or they get mushy), drain & set aside to cool.
  • Step #4 Boil the potatoes until tender but firm, & set aside to cool.
  • Step #5 Peel & chop into 1 1/2" chunks.
  • Step #6 Slice the pepper into thin strips about one inch long.
  • Step #7 Whisk together the vinaigrette items.
  • Step #8 Then mix the leeks, potatoes & red pepper into a serving bowl.
  • Step #9 Pour on the vinaigrette, toss, & chill well before serving.
  • Step #10 I usually add 4 tbsp of sliced dill.
