Leek~ Potato & Matzo Gratin Recipe

Ingredients
  • 1 10 oz can sliced clams,
  • Freshly ground white pepper
  • 2 Bay leaves
  • Trimmed & sliced
  • 1/2 c Packed sliced arugula
  • 1 Garlic clove, minced
  • 2 tb White wine
  • Salt
  • 6 oz Uncooked spaghettini
  • 1 1/2 tb Olive oil
  • Undrained
  • 1 lg Leek, white part only,

Directions
  • Step #1 1.
  • Step #2 Heat oil in large skillet.
  • Step #3 Add garlic & leek & saute over medium heat 5 mins.
  • Step #4 Add wine & cook this until it evaporates, about 2 mins.
  • Step #5 Add clams with liquid & bay leaves & let simmer 5 mins.
  • Step #6 2.
  • Step #7 Cook spaghettini in boiling salted water according to package directions until tender, but slightly firm at center.
  • Step #8 Drain well.
  • Step #9 Add to clam mixture in skillet & toss well.
  • Step #10 Add arugula & toss 30 seconds.
  • Step #11 Spice up lightly with salt & generously with pepper.
  • Step #12 Remove bay leaves.
  • Step #13 Serve as soon as possible.
