Step #1 ---SAUCE------ 2 tb Turkey or chicken fat -(I would use butter) 3 tb Flour 2 1/2 c -Water 1/2 ts Savory 1/2 ts Salt 1/2 ts Pepper 1/4 c CreamHOT BISCUITS--- 2 c Flour; all purpose 1 tb Baking powder 1 ts Salt 3/4 c Cream 2 Eggs; beaten Heat in frying pan 2-3 Tbsp melted butter or turkey or chicken fat.
Step #2 Add thinly sliced onion & sliced celery.
Step #3 Heat 5-8 mins over low heat, stirring often.
Step #4 Add 2-3 c cooked turkey.
Step #5 Cook 5 mins over low heat.
Step #6 Sauce: Brown the chicken fat (I would use butter) & flour well before adding water.
Step #7 Add savory, salt & pepper to taste.
Step #8 When sauce is smooth & creamy, add 1/4 c cream & any remaining turkey or chicken gravy.
Step #9 Pour over turkey.
Step #10 Simmer 15 mins, then serve this with hot biscuits & pickled beets.
Step #11 Hot Biscuits: Sift together in bowl, flour, baking powder (no error in amount) & salt.
Step #12 Mix together cream with 2 beaten eggs.
Step #13 Add to flour & mix just enough to moisten; the dough is rather soft & should remain lumpy.
Step #14 Stir as little as possible.
Step #15 Drop by spoonfuls on a greased cookie sheet.
Step #16 Cook 16 mins at 400?F.
