Lemon Chicken With Basil /dp Recipe

Ingredients
  • 1 Lemon, sliced into thin wedg
  • 1 c Tomato sauce-8 oz
  • Chives; sliced
  • 1/4 c White wine-cheap
  • Parmesan cheese.
  • 1 lb Mushrooms
  • 1 c Rice, uncooked
  • 2 Chicken breasts
  • 1 Basil; sliced fresh
  • 1/2 c Mozarella cheese, shredded
  • 6 Sprouts

Directions
  • Step #1 Chicken breasts can be split to 4 pieces or cubed to bite size.
  • Step #2 In deep fry pan, saute chicken & mushrooms in half of the white wine with basil, lemon, & chives until mostly done.
  • Step #3 Splash in rest of wine (or extra) as needed.
  • Step #4 Add tomato sauce, cover, & let simmer for 20 mins, or until thickened, stirring every once in awhile.
  • Step #5 When done, lemon wedges should be thoroughly cooked, & can be eaten.
  • Step #6 Serve over steamed rice.
  • Step #7 top this with a Sprinkle top of parmesan or mozarella (not too much) & a little Sprinkle top of chives.
  • Step #8 (It's good without the cheese, too.
  • Step #9 ) Garnish with a fresh sprig of basil & wedges from unused half of lemon.
  • Step #10 Serves 2 (plenty).
  • Step #11 NOTE: The white wine can be replaced with apple juice.
  • Step #12 As a matter of fact, I like mushrooms cooked in apple juice until it's reduced down to almost nothing.
  • Step #13 A lot less calories than cooking them in butter, & tastes great.
  • Step #14 Sometimes I'll put in a clove of garlic.
  • Step #15 (I haven't tried this when using apple juice instead of wine yet.
