Lemon Coconut Cake Recipe

Ingredients
  • 3/4 c Coconut; flaked
  • 1/2 c Confectioners sugar
  • 1 1/2 c Flour; unsifted
  • 3/4 c Margarine or butter; cold
  • 4 Eggs; slightly beaten
  • 1 ts Baking powder
  • 1 1/2 c Sugar; granulated
  • 1/2 c Lemon juice from concentrate

Directions
  • Step #1 In medium bowl, mix flour & confectioners' sugar, cut in margarine until crumbly.
  • Step #2 Press onto bottom of lightly greased 13 x 9" baking pan; bake @ 350 degrees for 15 mins.
  • Step #3 In large bowl, granulated sugar, mix eggs, baking powder & lemon juice.
  • Step #4 Pour over crust; top this with coconut.
  • Step #5 Bake 20 mins or until golden.
  • Step #6 Cool.
  • Step #7 Cut into bars.
  • Step #8 store this in refrigerator.
