Lemon Curd (bon Appetit) Recipe

Ingredients
  • 1 c Fresh lemon juice
  • 2 Lemons, grated zest only
  • 5 Egg yolks
  • 2 c Sugar
  • 5 Whole eggs
  • 8 tb Sweet butter

Directions
  • Step #1 mix THE EGGS, EGG YOLKS & sugar in a mixing bowl & beat until smooth.
  • Step #2 Add the lemon juice & lemon zest & mix.
  • Step #3 Place the bowl over a pot of boiling water or in the top of a double boiler & stir vigorously with a wooden spoon until the mixture thickens.
  • Step #4 This mixture will not curdle, so don't worry about overcooking it a little.
  • Step #5 Remove the bowl from the boiling water & stir in the the butter until melted.
  • Step #6 put in the fridged, this will keep for up to 3 months.
  • Step #7 TO MAKE A LEMON CUSTARD PIE: preheat your trusty oven to 375F.
  • Step #8 Fill a 9-inch pie shell & bake for 15 mins.
  • Step #9 Makes 1 Quart.
