Lemon Curd(welsh) Recipe

Ingredients
  • 1/2 ts Finely shredded lemon peel
  • 3 Eggs, well beaten
  • 1/2 c Shortening
  • Blueberries
  • 1 1/4 c Sugar
  • 1/2 ts Salt
  • 1/3 c Lemon juice
  • 1 1/2 c All-purpose flour

Directions
  • Step #1 Sift together the flour & salt; cut in the shortening until the mixture resembles coarse crumbs.
  • Step #2 Sprinkle top 1 tbsp water over part of the mixture.
  • Step #3 carefully toss with a fork & push to side of bowl.
  • Step #4 Repeat with 3 or 4 more tbsps of water until all is moistened.
  • Step #5 Form dough into a ball.
  • Step #6 Roll out to 1/16-inch thickness.
  • Step #7 Cut into 3- inch circles.
  • Step #8 Fit into small tart pans; press out bubbles.
  • Step #9 Prick dough with tines of fork.
  • Step #10 Bake in a 450 F oven for 8 to 10 mins until shells are golden.
  • Step #11 For lemon curd, lemon juice, in a saucepan mix the eggs, sugar, & butter.
  • Step #12 Cook & stir over low heat/flame until thickened, about 15 mins.
  • Step #13 remove this from heat & stir in the lemon peel.
  • Step #14 Chill.
  • Step #15 Fill each baked shell with 2 to 3 tsps of filling; chill.
  • Step #16 Just before serving, top this with blueberries.
  • Step #17 Makes 30 tartlets.
