Lemon Fluff Custard For Dee Recipe

Ingredients
  • 1/4 c Lemon juice; fresh squeezed
  • 1 ds Cinnamon
  • 1 Nutmeg; fresh grated
  • 1 c Half & half; scalded
  • 1/2 c Sugar
  • 1 ds Nutmeg
  • 1 c Sour cream
  • 1/2 ts Salt; optional
  • 3/4 c Currants; or raisins
  • 3 Eggs; well beaten
  • 1 1/4 c Rice; cooked/cooled

Directions
  • Step #1 preheat your trusty oven to 325F degrees F.
  • Step #2 Mix the well-beaten egg with the sugar & salt.
  • Step #3 Add one-half of scalded half & half in a very fine stream, stirring vigorously all the while.
  • Step #4 Mix the sour cream into the remaining half & half, and stir in theto the first mixture, along with the lemon juice.
  • Step #5 Add the rice, currants (or raisins), & nutmeg.
  • Step #6 Mix together well.
  • Step #7 Pour the mixture into a buttered casserole, & set it in a shallow pan.
  • Step #8 Pour hot water into the pan, so that it comes about half-way up the side of the casserole.
  • Step #9 Grate the fresh nutmeg on top of the custard.
  • Step #10 Bake 1 1/2 hrs, or until the custard is set & turning golden on top.
