Lemon Glaze (for Cookies) Recipe

Ingredients
  • 2 Kiwifruit, peeled, cut in fourths, then sliced
  • Stem ginger slices
  • Cookies
  • 4 ts Stem ginger syrup
  • 1 Finely grated lemon peel
  • 1 Egg white
  • Lemon twists
  • 2 tb Lemon juice
  • 1 1/4 c Whipping cream
  • 2 Pieces stem ginger, sliced
  • 1/3 c Sugar

Directions
  • Step #1 Whip cream & sugar until cream begins to thicken.
  • Step #2 Add lemon peel and juice & whisk until thick & velvety.
  • Step #3 Fold in stem ginger.
  • Step #4 Whisk egg white stiffly & fold into cream mixture.
  • Step #5 Place kiwifruit in bottom of 4 glasses.
  • Step #6 Sprinkle top with stem ginger syrup.
  • Step #7 top this with cream mixture & chill 2 hrs.
  • Step #8 Garnish with lemon & stem ginger.
  • Step #9 serve this with cookies.
  • Step #10 VARIATION: Substitute pitted cherries, sliced peaches or nectarines for kiwifruit.
