Lemon Layer Cake :::gwhp32a Recipe

Ingredients
  • 2 1/2 c Cake flour; sifted
  • 3 Eggs; unbeaten
  • 1 1/2 c Sugar
  • 3 tb Water
  • 2/3 c Butter; or shortening
  • 2 ts Baking Powder
  • 6 tb Lemon juice
  • 1/4 ts Salt
  • 1 tb Lemon rind; grated

Directions
  • Step #1 Sift flour once, measure, add baking powder & salt & sift.
  • Step #2 together three times.
  • Step #3 Add lemon rind to butter.
  • Step #4 & cream thoroughly; add sugar slowly & cream together until light & flfy.
  • Step #5 Add eggs, one at a time beating thoroughly after each.
  • Step #6 Add flour, alternately with mixd lemon juice & water, a small amount at a time beating after each addition until smooth.
  • Step #7 Bake in two greased 9-inch layer pans in moderate oven (375 degrees F.
  • Step #8 ) 20 mins, or until done.
  • Step #9 Spread Luscious Lemon Frosting (see recipe) between layers & on top & sides of cake.
