Lemon Lime Salmon Recipe

Ingredients
  • 3 qt Water
  • 1 c Thinly Sliced Lemons,
  • 9 c Sugar
  • Unpeeled, Seeded
  • 3 c Thinly Sliced Unpeeled Limes

Directions
  • Step #1 mix lime & lemon slices & water in large kettle.
  • Step #2 Bring to boil & boil 20 mins, or until peels are tender.
  • Step #3 Drain and measure liquid.
  • Step #4 Add enough water to make 3 quarts liquid, then mix liquid, fruit & sugar in kettle.
  • Step #5 Bring to boil & cook rapidly until mixture sheets off spoon or to 221 degrees on candy thermometer.
  • Step #6 Pour boiling hot into hot sterilized jars & seal.
  • Step #7 Makes 6 to 8 half-pints.
