Lemon Meringue Cookies Recipe

Ingredients
  • 1 Egg FILLING:
  • 4 Egg whites
  • 1 3/4 c Water
  • 2 tb Margarine
  • 1/2 c Cornstarch
  • 1/4 ts Cream of tartar
  • 1 pk Pillsbury Plus Yellow Cake M
  • 1 1/3 c Sugar
  • 4 Egg yolks; slightly beaten
  • 1/2 c Lemon juice MERINGUE:
  • 2 tb Grated lemon peel
  • 1/2 c Margarine or butter
  • 1/2 c Sugar
  • 1 ds Salt

Directions
  • Step #1 Heat oven to 350 degrees.
  • Step #2 Grease 13X9-inch pan.
  • Step #3 In large bowl, mix cake mix, 1/2 c margarine & egg; mix at lowish speed until crumbly.
  • Step #4 Press mixture in bottom of greased pan.
  • Step #5 In medium saucepan, mix 1-1/3 c sugar, cornstarch & salt.
  • Step #6 slowly stir in the water; mix until smooth.
  • Step #7 Cook over med-heat/flame until mixture boils, stirring constantly.
  • Step #8 remove this from heat.
  • Step #9 Stir about 1/2 c of hot mixture into egg yolks; return egg mixture to a saucepan.
  • Step #10 cook this until mixture is bubbly.
  • Step #11 (Mixture will be very thick.
  • Step #12 ) remove this from heat; stir in the 2 tbsps margarine, lemon peel & lemon juice.
  • Step #13 Pour filling over base.
  • Step #14 In small bowl, beat egg whites & cream of tartar at medium speed until soft peaks form, about 1 min.
  • Step #15 Add 1/2 c sugar 1 tbsp at a time, beating at high speed until stiff peaks form & sugar is dissolved.
  • Step #16 Spread meringue over hot filling.
  • Step #17 Bake at 350 degrees for 25 to 35 mins or until meringue is golden brown.
  • Step #18 Cool 1 hr.
  • Step #19 put in the fridge at least 1 hr before serving.
  • Step #20 12 servings.
  • Step #21 Dietary Exchanges: 1-1/2 Bread (starch), 3 Fruit, 3 Fat.
