Lemon Rice With Cashews. Recipe

Ingredients
  • 1 tb Snipped fresh parsley
  • 2 c Cooked brown rice
  • 2 tb sliced onion
  • 1 lb Sole fillets -
  • 2 tb Butter or margarine; divided
  • 1/4 ts Thyme
  • 2 tb Fresh lemon juice
  • 1/8 ts Ground black pepper
  • 1/4 ts Salt
  • 2 ts Grated lemon peel
  • 1/4 c Sliced celery

Directions
  • Step #1 In medium skillet cook celery & onion in 2 tbsps butter until tender.
  • Step #2 stir in the rice, Spice upings, & lemon juice.
  • Step #3 Place fillets in buttered shallow baking dish.
  • Step #4 Spoon rice mixture on lower portion of each fillet.
  • Step #5 Fold over to enclose rice mixture.
  • Step #6 Fasten with wooden picks.
  • Step #7 Melt remaining butter.
  • Step #8 Brush over fillets.
  • Step #9 Sprinkle top with parsley.
  • Step #10 bake this at 350 degrees 20 to 30 mins or until fish flakes easily with fork.
  • Step #11 Or any white-fleshed fish such as haddock, turbot, or white fish.
