Lemon Roasted Garlic Beurre Blanc Recipe

Ingredients
  • 1 c -Water
  • 2 ts Oregano;dried
  • 3 Garlic cloves -minced
  • 1/3 c Oil;olive
  • 1/2 c Lemon juice
  • 1 ts -Pepper
  • 2 ts Salt
  • 4 lb Potatoes; 8 to 10-peeled

Directions
  • Step #1 Cut potatoes lengthwise into thick wedges; place this in 13"x9" (3L) baking dish.
  • Step #2 Whisk together water, salt, garlic, oil, lemon juice, oregano & pepper; pour over potatoes, turning to coat evenly.
  • Step #3 Bake in a 325F oven, carefully turning every once in awhile to keep potatoes well moistened, for about 2 hrs or till potatoes are very tender and moist & most of the liquid has evaporated.
  • Step #4 SERVES: 8 Food Exchange per serving: 1 STARCH/BREAD EXCHANGE + 1 FAT EXCHANGE.
