Step #1 Cut potatoes lengthwise into thick wedges; place this in 13"x9" (3L) baking dish.
Step #2 Whisk together water, salt, garlic, oil, lemon juice, oregano & pepper; pour over potatoes, turning to coat evenly.
Step #3 Bake in a 325F oven, carefully turning every once in awhile to keep potatoes well moistened, for about 2 hrs or till potatoes are very tender and moist & most of the liquid has evaporated.
