Lemon Souffle' Recipe

Ingredients
  • 1 c Water
  • 4 c Fresh blueberries
  • 1 1/2 pt Lemon sorbet
  • 3 tb Sugar
  • 3 tb Fresh lemon juice
  • 2 tb Cornstarch
  • 2 c Fresh blueberries

Directions
  • Step #1 lemon peel, thinly sliced (yellow part only) fresh lemon balm or mint sprigs SAUCE: mix 4 c fresh blueberries (or frozen), water, lemon juice & cornstarch in heavy large saucepan.
  • Step #2 Stir over medium-high heat until mixture boils & thickens.
  • Step #3 Cool slightly.
  • Step #4 Puree mixture in processor or mixer until smooth.
  • Step #5 Mix in sugar.
  • Step #6 put in the fridge until chilled, about 3 hrs.
  • Step #7 (Can be prepared 2 days ahead.
  • Step #8 ) Scoop sorbet into goblets.
  • Step #9 Spoon sauce over.
  • Step #10 top this with fresh berries.
  • Step #11 Garnish with lemon peel & lemon balm.
