Apple-pepper Jelly Recipe

Ingredients
  • --TOPPING-----
  • 2 oz Pkg. sliced pecans
  • 1 c Light brown sugar, packed
  • 2 Granny Smith apples, peeled cored & sliced
  • 1/4 c Butter

Directions
  • Step #1 ----CAKE------- 1 c Flour 2 ts Baking powder 1/2 ts Ground cinnamon 1/4 ts Salt 6 tb Butter, softened 3/4 c Sugar 1 Egg 1/2 ts Vanilla extract 6 tb Milk Whipped cream, optional Topping: Toast pecans on ungreased baking sheet at 450F.
  • Step #2 until lightly browned, about 10 mins.
  • Step #3 Check frequently to prevent burning.
  • Step #4 Melt butter in small, heavy saucepan.
  • Step #5 Add brown sugar & cook, stirring just until melted, 3 to 5 mins.
  • Step #6 Watch closely because sugar burns easily.
  • Step #7 Pour butter-sugar mixture into a 9" round nonstick cake pan and spread to coat bottom.
  • Step #8 Sprinkle top sliced pecans on top of butter-sugar mixture.
  • Step #9 Place apples in concentric circles, slightly overlapping, over pecans.
  • Step #10 Cake: Sift flour, baking powder, cinnamon & salt into bowl.
  • Step #11 Using electric mixer, beat butter at medium speed until light and fluffy.
  • Step #12 add sugar & continue beating until creamy, 3 to 5 mins.
  • Step #13 Add egg & vanilla & continue beating until completely incorporated.
  • Step #14 Reduce speed to low, add flour mixture & milk, alternating in 3 additions.
  • Step #15 Continue to mix only until dry ingredients are completely mixed in, stopping to scrape sides if necessary.
  • Step #16 Spoon cake batter over topping & spread carefully so batter is even.
  • Step #17 bake this at 325F.
  • Step #18 until tester comes out clean, about 55 mins.
  • Step #19 Cool in pan 10 to 15 mins.
  • Step #20 Carefully run spatula around edge of pan & let this stand another 10 to 15 mins.
  • Step #21 Invert pan over large plate & let this stand about 3 mins.
  • Step #22 Carefully remove pan.
  • Step #23 Serve warm with fresh whipped cream.
