Apples In Wine Recipe

Ingredients
  • 250 g Sugar
  • 5 dl Red wine
  • 1 Stick cinnamon
  • 1 kg Apples - You NEED an apple that - will hold its shape - during cooking !!

Directions
  • Step #1 Ten hrs in advance, cook the wine, cinnamon & sugar over a brisk heat for 10 mins, using a broad, shallow saucepan.
  • Step #2 Peel the apples and, using a melon-baller of about 2.
  • Step #3 5 cm (1 in) diameter, cut them into little balls.
  • Step #4 Throw the apple-balls into the hot wine.
  • Step #5 They should not overlap: this is why you need a broad, shallow pan.
  • Step #6 Simmer them for 5 to 7 mins, covered with aluminium foil to keep them submerged.
  • Step #7 When the apples are cooked but still firm, remove the pan from the stove.
  • Step #8 Let the apple-balls macerate in the red wine for about 10 hrs to take on a good red colour.
  • Step #9 Serving: well chilled, with a scoop of vanilla ice-cream, or in a selection of cold fruit desserts.
