Step #3 : Cortland; : McIntosh; Golden Delicious; : Gala; : etc , cored & quartered 1/2 c water 3/4 c to 1 c sugar -- to taste : Juice of half a lemon 2 ts cinnamon -- optional In a large saucepan mix the apples, & let simmer the mixture, 1/2 c water & sugar, stirring every once in awhile & breaking up the apples, bring the liquid to a boil, for 20 mins.
Step #4 When the apples are tender & the mixture is the consistency of a chunky puree pass the apples through a food mill & return to the saucepan.
Step #5 Simmer the applesauce, carefully, for an extra 5 to 10 mins or until slightly thickened.
